Bonus! Muffins!

Bonus post! Me and a muffin! I had a few bananas that had seen better days, and what better to do with browning bananas than turn them into muffins? 


Ta da! Chocolate chip banana, with a touch of cinnamon - and whole wheat flour to boot (I do like saying "to boot")! They are so delicious, light and fluffy. These muffins make me happy, a very slight tweak on a recipe I found online with my dear friend Colette many, many years ago (look carefully, and you may see her pretty face in the background of the picture).

Please ignore the mess behind me (and on my head). Such is life, I suppose. But who cares about a mess when you have muffins?

  1.  I just made banana bread a couple days ago for the same reason!  I've been making mine "spicy" lately, with 1/2 tsp. cinnamon, 1/2 tsp cloves, and 1/4 tsp cardamom, as well as 1 tsp vanilla.  This past loaf I also did 3 parts white sugar to 1 part brown, which resulted in some mighty sweet spicy BB! <3

  3.  I SO wish I had some brown bananas with which to make muffins. 

    Question. I have one brown banana and it is in the freezer. I wanted to use it for a smoothie the other day, but I couldn't figure out how to peel it. How does one peel a frozen banana?

  4. I stick it in the fridge (in a bowl, because it will leak banana juice) for
    a few hours or overnight until it's thawed, and then I peel it like normal.
    Sometimes I have to use a knife to start it because the peel can get a
    little rubbery after being frozen and thawed. Bonus (you will like this I
    think), the banana oozes out of the peel, all squishy-like. It's kind of
    gross and kind of awesome.
